So in the previous blog posts, recipes aside, we’ve started to discuss what nitrous or N2O is and what its applications are within the culinary realm, but in this article we’re going to explore nitrous on a fundamental level. We will take a magnifying glass to nitrogen, nos, and other similar variations and what the differences are between nitrous oxide and its similarly named cousins in order to better understand why this glass is the top choice for chefs around the world.
Is N2O The Same As No2?
Nitrogen oxide is a term that’s frequently used to describe a group of gasses that includes nitric oxide and nitrogen dioxide, as well as nitrogen trioxide. Nitric oxide is the colorless, tasteless compound that chefs and culinary enthusiasts around the world choose to utilize to enhance their dishes, while nitrogen dioxide is a brown-red gas that stinks in a blatant manner.
Nitrogen trioxide is an oxidizing agent that isn’t flammable on its own, but could prove combustible if added to explosive materials.
Is N2O Acidic Or Basic?
Nitrous or N2O is a unique gas in the sense that it is completely neutral, meaning that it has no properties of the basic or acidic gasses. This also means that when reacted with acids or bases salts do not form as a reactive element. This is what allows the gas to have both a neutral taste and flavor when applied to different culinary elements including dairy.
Is NOS The Same As Nitrogen?

As far as nitrous, NOS, or N2O is concerned, you’re looking at nitrogen dioxide. This is the slightly sweet, mostly flavorless and tasteless gas that’s used as a culinary additive. This substance can be harmful to humans if it is repeatedly inhaled, as it can cause similar reactions as nitrogen in the aforementioned paragraph: depletion of oxygen within your blood supply.
As you may have noticed, the terminology and slang used to identify nitrous oxide can be pretty confusing! Another fact to help solidify the difference in your minds is that nitrogen is an inert gas that comprises 78% of the Earth’s atmosphere.
Why is N2O Harmful To The Environment?
N2O makes up 5% of the global greenhouse effect which means that every time more is released into the atmosphere, regardless of the means by which it gets there, it is assisting in the breakdown of the stratospheric zone. On average, the EPA states that gasses like this remain trapped in the stratosphere for up to 114 years and during this time the gas traps heat and absorbs radiation.
In this case, our suggestion would simply be to minimize waste and use only what you need! Is N2O An Addictive?

In the case studies reviewed, the decision to conduct broader studies was made insofar that the groups studied were too small to make an overall ruling on addictive potential.
Is Nitrous Bad For Your Brain?
