- 1 cup fresh cranberries
- 1/2 cup orange juice
- 1/4 cup sugar
- Zest of 1 orange
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup Greek yogurt
-
Prepare the Compote: Combine cranberries, sugar, lemon zest and juice, orange zest and juice, and 2 tablespoons water in a small saucepan; bring to a boil over medium. Boil, stirring often, until cranberries burst and mixture thickens, 8 to 9 minutes. Let stand at room temperature 1 hour. Cover and chill at least 4 hours or up to overnight.
-
Prepare the Lemon Topping: Beat softened cream cheese and sour cream with an electric mixer on medium speed until smooth, about 1 minute. Add sugar, lemon zest and juice, and orange zest; beat until light and fluffy, about 2 minutes, stopping to scrape down sides as needed.
-
Assemble the parfaits: Spoon about 4 1/2 tablespoons cookie crumbs into each of 6 (1-cup) glasses or ramekins; top each with about 1/3 cup Lemon Topping. Cover and chill until ready to serve. Just before serving, uncover and top each glass with about 2 tablespoons chilled Compote.
